I'm sure you've all heard of and enjoyed Oreo ice cream, but what about Party Ring ice cream. Now I, like every member of the UK, love a party ring. They are a staple treat food and combine them with a rich ice cream and you get that delicious party ring flavour, crunch and colour paired with smooth, rich ice cream. I honestly don't understand why no one has tried this before!

Now you may be wondering, why is this not a no churn ice cream? Maybe I will venture into them in the future but when I have attempted to make them I find them far too rich (and I mean when I make ice cream I want to eat a LOT!). However I don't own an ice cream churn!
What an ice cream churn does is by freezing the ice cream quickly it prevents the formation of ice crystals (which make the ice cream less smooth). A blast chiller may also work well. In most no churn ice creams they solve this problem by using ingredients with higher fat contents and lower water contents (as it is the water that causes these crystals to form). This increased fat content can make the ice cream very rich though!
So in my recipe I have shown the time consuming alternative to a churn (mashing the ice crystals manually to prevent their formation as much as possible!). This method can be used for any ice cream recipe which requires a churn.
To make this recipe rich and delicious I made a custard base which I added cream to. The custard uses the eggs to thicken it and be warned it doesn't thicken very much! (not like when you use cornflour) You should notice a difference when you're stirring though and to the consistency of the mixture on the back of the wooden spoon.
When you draw a finger through the mix on the back of the spoon it should hold the line you made (not bleed into it from the sides), this shows the custard is done!
For this recipe I used vanilla bean paste as it has the vanilla seeds in it, however perhaps it could be substituted for 2 tsp of vanilla extract (to taste) if you feel vanilla seeds are too posh for party rings.
Now for this recipe I want to credit my Gran again, I used her delicious custard recipe as a base for the ice cream. Where would we be without Grans and their amazing recipes?! Recipe
Ingredients (makes about 1.5l of icecream):
400ml Full Fat Milk
400ml Double Cream
100g Caster Sugar
2 Medium Eggs
1tsp Vanilla Bean Extract
250g Party Rings (2 Packets)
Instructions:
Whisk together the eggs, sugar and vanilla in a large bowl till they are well combined.
Heat the milk gently till it just starts to bubble (just before boiling, but don't let it boil!), giving it a little shake occasionally to stir.
Gradually add the milk to the egg mixture whisking as you add it, till fully combined. Pour the mixture back into the pan.
Heat the mixture gently (again you don't want it to boil), stirring with a wooden spoon. You can tell its done when you look at the back of the spoon. If you can draw a line through the custard on the back of the spoon with your finger and the line doesn't disappear the custard is done.
Leave the custard to cool till you can touch it (place heat-proof clingfilm over the whole surface of the custard to stop it forming a skin). Then gradually whisk in the cream.
Place the ice cream in an airtight container and place in the freezer for 2 hours.
Mix the ice cream with an electric mixer (to break down the ice crystals), freeze for another 2 hours.
Mix the ice cream again with an electric mixer, freeze for 2½ hours.
While the ice cream is freezing roughly blitz all the party rings in a food processor (make sure to leave larger bits of biscuit!).
Mix the ice cream again, once it is smooth mix in most of the biscuits (save a small handful for decorating). Transfer the ice cream when the party rings are well combined and sprinkle over the handful of blitzed biscuits you set aside.
Freeze for a further 2 hours, then its ready to enjoy (best served with extra crushed party rings on top! see picture above)!
